Pho

I've taken my pho obsession to new levels lately and the whole family are happy recipients! Here's what you need to whip one up in no time. Serves two adults and two young kids.

  • 1 litre MFM Beef & Chicken Broth
  • 3 tbsp of fish sauce
  • 2 tsp maple syrup or sugar (to be authentic it needs a little sweet)
  • 1 packet fresh pho rice noodles (I've been buying mine from Harris Farms)
  • 2 handfuls of  bean sprouts
  • 500 gram eye-fillet steak finely sliced
  • 2 handfuls of Thai basil, mint and coriander
  • 1/4 spanish onion finely sliced
  • Squeeze fresh lime

Warm the broth to a simmer and add the fish sauce and sweetener. Add the rice noodles for a minute to warm them up and loosen them. Then pour into the bowls and add the steak, stir it through so its immersed in the hot liquid which will slightly cook it, leaving it a little raw is perfect. Then top with bean sprouts and herbs and a squeeze of lime.
