A Great Pikelet Recipe
Here is a really great pikelet recipe that is super nutrient dense, easy for little tummies (especially if you soak the batter overnight), and makes excellent leftovers for snacks or lunchboxes.
Disclaimer. There is no broth in this recipe. But alike broth recipes this one is great for your gut! And on that note. We have been loving Gaga's Gut Loving Coconut Kefir at the moment, adding it into our daily smoothies. And we used it as the ferment in these.
Add extra milk if you want them slightly thinner which is how I made our first batch. But i found the thicker ones were really fluffy and kept well for later.
Ingredients
1/2 cup buckwheat flour
1/2 cup almond meal
pinch of salt
1/2 cup oat milk
2 tablespoons kefir
sprinkle of cinnamon
1 tablespoon raw sugar
1 tablespoon butter or coconut oil (plus extra for cooking)
2 eggs
1/2 teaspoon baking soda
Method
Preferably mix together the buckwheat flour, almond meal, salt, oat milk and kefir in a small bowl and soak overnight. In the fridge or on the counter if it’s not too hot. If you don't have time for this step (reading this recipe and wanting to cook straight away) - it’s ok - you can still use this recipe and skip this step!
Add the rest of the ingredients and blend well - with a whisk or a bamix or handheld beaters.
Heat some butter or coconut oil in a heavy based frypan until very hot. Add a very heaped tablespoon to the pan and cook for around 3 minutes. You should see small bubbles appear before turning it over for another minute.
