Pickled Cucumbers

These divine little gems are a wonderful way to add some side veg to your cup of broth. With the perfect amount of acidity to cut through the healthy fats in that cup. Or as a flavoursome addition to your dinner. Completely moreish, they work with chilli sauce, chilli flakes, smashed garlic or ginger. Whichever your preference.

 

Ingredients

1 large cucumber

1/8 cup tamari

1/4 cup of brown rice vinegar

Large splash of sesame oil (toasted is really yum!)

Large splash of maple syrup or a tablespoon brown sugar

Optional chilli sauce, chilli flakes, smashed garlic or ginger - around a tbsp of either

 

Method

Chop the cucumber in quarters length wise then into small pieces. Combine all the other ingredients in a small bowl, mix well then pour over the cucumbers so they are completely submerged. Let them sit for around 20 minutes then enjoy their deliciousness.
