Pico de Gallo

My ultimate summer go to. We often make a huge bowl and enjoy it with corn chips and tacos after long salty days at the beach. Packed with antioxidants it is the perfect summer remedy. 

Ingredients

2 capsicum  (a combo of orange and red is perfect)

2 large tomatoes 

1 red onion

4 garlic cloves

bunch of coriander

1 jalapeño (or chilli to your preference)

1 tbsp cumin powder

1 tbsp paprika

1 tbsp Himalayan rock salt

6 limes

2 lemons

Method

Chop the capsicum, tomatoes, onion, garlic, coriander and chilli until fine. Add the spices and salt. Then cover with citrus juice and stir until well combined. Enjoy your Pico de gallo with corn chips, inside tacos, alongside quesadillas or on top of nachos.
